this may have been asked but cannot be bother reading through the thread....

does anyone have tip for cooking a fried egg just right.... and flipping it over in one go.... without bursting it?
As with a lot of things it about having the right tools for the job. Buy a decent frying pan . The one I got at home cost about €200 but it will last for life also you could drop an egg from 300 foot on to it and the it would not burst and no need for a swimming pool of oil .

Did you get a wife with it Gnevin?

::)

Not a chance, a good cast iron pan picked up for next to nothing and once it's treated properly, it will do just as good a job.

Cast iron is too heavy and takes too long to heat .
Anyway, long story short... is a phrase whose origins are complicated and rambling.

I always have steak done like this now. its lovely. it helps locke in the juices or somethin i dunno but its first class.

Thats chef babble for we don't know what the feck it does, there are actually causing a malliard reaction between carbohydrates and proteins, it gives very desirable flavours. The trick is to heat it enough to cause the reaction but not enough to cause burning, spit roasting is probably the single best way of acheiving this hence why meat done this way tastes great. What jamie is suggesting is for all intensive purposes the same principe flip it from side to side. Sorry to get all heston blomfield on the subject but the nerd in me couldn't resist  :)

The Family fry a lot . The Knife was the best €200 I ever spent they've come down quite a lot http://www.paulsfinest.com/Wusthof-Classic-p-1-c-8.html plus shipping was a rip off.

How much do you piss away each week on drink? I'll have that knife forever , you'll have a drink for about 20 minutes.  A Carbonara with bacon or  is lovely
