Diana Henry is from the wee North and she has a great recipe for chicken stuffed with sausage meat and pine nuts. My father in law used to love it. That recipe could probably be upscaled to fit a turkey's arse and would be tastier than plain cocktail sausages because it would have all the juices from the bird. But I would draw the line at Boxing Day.
