I prefer San Quentin as it's a grittier song than the Folsom Prison Blues, but both are great easy listening...

Johnny Cash.  Some absolutely unreal songs and what a voice.  I always enjoy the songs when I hear them, but to my shame I rarely seek them out.  My choices wouldnt be beyond the norm here, and likely just 3 of his top hits.

Substandard

He had a tremendous range, some talent.  I've been everywhere- i wouldn't be able to read it that fast, let alone recite or sing it.  He had humour, like one piece at a time, anger, love and pathos across his catalogue.  The Wanderer was powerful,  and U2 brought him back like the Pet Shop Boys did with Dusty Springfield.  Hurt is spellbinding,  and the accompanying video has to be among the best ever. 
One of those artists for whom your Top 3 could be a colossal amount of permutations.
