What I usually do is heat the pan to a very hot temperture and then throw on the steak on one side for about 30secs then do the same with the other side,this sears the steak and keeps the juices locked in.
I then lower the heat and cook either side for about 4mins each which results in lovely medium steak...

Then put them in the oven on a really low heat, and that will speed up the defrost process, once they are no longer rigid leave them out on the side , the heat of the kitchen should finish the job.......

Could you not just cook them frozen like fish fingers? Stick them under the grill or throw them on the pan as they are and Bob's your mother's brother!

Funny I would eat a defrosted steak no problem, I do about twice a week (We get these cracking porterhouses for 5-6$ a piece if you go to the right store at the right time of day).

I know I have eaten defrosted chicken before - but I cannot bring myself to prepare it. I am scared of chicken.

Put them in a sandwich bag and submerge in hot (not boiling) water - slower than a microwave but less risk of them cooking.

Have done it numerous times with chicken breasts.
