One of the many things I miss about home is good spuds. They are poor over here. Oh for a big plate of records covered in butter.

Have to agree with the initial post re pint of ice cold full cream milk.

Mustard? Certainly. Where I come from, anyway. A little dollop on the side of the plate and dip the edge of your forkful of bacon into it for just a touch of piquancy. Now drowning it in brown sauce - why would you do that and how would you taste anything but brown sauce?

I hope I'm not getting too nouvelle cuisine here, but as an alternative to boiling the bacon/ham, coat it with honey and bake it in the oven. Mmmmmm.

I double cook it, but only boil if its to be served with spuds and cabbage

Step 1  boil the bacon in a large pan with celery,carrot, challotts (whole) a few bay leaves and some black peppercorns
Step 2 remove from water, peel off the skin, score the fat and stud with cloves and bung in the oven
Step 3 About 15 mins before end of cooking apply a mix of honey with a wee touch of mustard and baste regularly
Step 4 ate the f**ker, yum!!

You can actually replace the honey with coke, add the tin of coke about 20 mins before end of cooking and baste regularly


Another thing you can do is creamed cabbage, its rather unhealthy but tastes great

Leave the mustard to the English and French. HP is the daddy.

Bacon or ham joint double-boiled and roasted in the oven with honey and brown sugar! Mmmmm. Never been a fan of the old ham with mustard/clove combination and have yet to get a decent slice of ham at a carvery - always too salty. Mustn't double boil it.

Cabbage dressed on the pan with a bit of onion, bacon and spuds and butter

have to agree its hard to get good spuds over here - I'm contemplating growing my own in a bucket or two outside - think it will be a disaster but its worth a shot

i could murder a big plate of chips and a mince pie with red sauce about now too!

nothing like turnips for the winter when the cabbage is out season, mashed in with the spuds with pepper
