The recommended level is 2 litres/day (?) is it best to drink water or do copious cups of Tea/Coffee count?

Tea and coffee count a bit but not as much as the same volume of water.  Tea and coffee is also a diuretic so you lose some of the water your taking on board.  Not a bad idea to take a cup of coffe or tea before training or a match as you should be well hydrated for the diuretic effects not to matter much and the caffeine will act as a stimulant.

There's mixed opinion on whether caffeinated beverages will cause noticable de-hydration. Personally - if you are counting on copious amounts of cups of tea and coffee to count towards your hydration - you aren't going to get there at all. There is little substitute for water when it comes to hydration.

I've pretty much gone cold turkey on the coffee this last 6 months, and upped the water in take to about 2.5 litres a day. Feel much more hydrated and healthy as a result. If you're in a pinch and need a quick hydration boost - pick up some coconut water. It's powerful stuff.

Is this the same as coconut milk?

I would drink 2- 3 litres of lucozade sport a day, and what I have noticed from my research into it, is that I piss for 33% longer!

No, Coconut milk is used in cooking mostly and is pretty high in calories and fat and comes from the flesh of the coconut. Coconut water is what is inside the coconut (young coconuts are better) and is high in natural electrolyes (potassium, sodium etc). Coconut water is what lucozade sport wishes it was. 2-3 liters per day? That seems like a lot of unneccesary calories, and expense? I don't even think a full time athelete would drink 2-3 liters of that stuff per day?

Right puck, must get some this coconut water.  When i said coconut milk, I was thinking of the stuff inside it.  I thought the other stuff was called condensed coconut milk?
