I came across this recipe when I was doing research for my Irish Traditional Cookbook, a friend from Strokestown in Co. Roscommon told me how his mother remembered how her grandmother would strew the base of the bastible (a pot oven) with chopped rhubarb, sweeten it with a sprinkling of sugar and cover it with an enriched bread dough.  When the cake was fully baked in the pot over the open fire, it was turned out so that it landed upside down, with the sweet juice soaking into the soft golden crust.  It was served warm with soft brown sugar and lots of softly whipped cream.

Some finish in Kiltoom 60 mins on the clock it was Roscommon 2-16 Mayo 1-11 ahead. Then three Mayo goals O Connor penalty on 61 mins,Andy Moran goal on 64 mins and another Andy Moran goal in the 6th minute of injury time with the last kick of the game to win it for Mayo 4-11 to 2-16.

2-16 scored in 60 minutes is good going v Mayo. Roscommon would be a decent team if they ever learn the basics of defending. Structure and the right system in place would work wonders for even the most average Roscommon defenders.

Sligo beat Leitrim 2-13 to 0-16 in the other FBD game today.

Great to see the joy on Andys face as he kissed the crest on his jersey and gave a huge fist pump after scoring the winning goal ;D It is like doing a lap of honour after winning the toss.

Apparently the Rossie supporters were being their usual gracious, sporting selves.
The Mayo sideline had that in their ear all afternoon which probably riled up Andy - fair play to him. Nice way of shutting them up :-)

The celebrations and crest kissing were mentioned by the RTE reporter doing the post game wrap up on Sunday Sport too. (Pauric Lodge, maybe?) So it definitely made a impression, no mater where you were from.
