Rafter Dempsey's is a good spot to stay, we stauyed there on a stag a couple of years ago
had no problem getting groups into the bars
didn't see any strip clubs.

The Left Bank on the Parade or Kyteler's Inn on Kieran St.
And sure the aul reliable Langtons is always worth a visit.
Plenty of pubs around,stay clear of places like Matt the Millers,Biddy Earlys and Lanigans unless you are 18,or looking for a 18 year old 
If you were looking for skanky Dublin hens then the Killford Arms is where you will find most of the 'How yais' girls down for a hen night.

Nightclubs/ bars close a bit on the earlyish side......... 1.30pmish.

PLEASE PLEASE  BE CAREFUL WITH THE DRIVING HOME ON THE "MORNING AFTER"........ ALWAYS CHECKPOINTS  ON THE ROADS THERE ON THE SUNDAY MORNING. Wait till you are fit to drive before going home.

Always felt that Kilkenny doesn't really want Stags/Hens but is reliant on them. Very ambivalent attitude.
