I was working on my Christmas gingerbread martini the last few weekends.

2 parts vodka
1 part Baileys
1 part Kahlua
1 part Monin gingerbread syrup
Milk or melted ice cream

Absolutely beautiful.

I went for a regular old fashioned there. The farther I get down the glass the better it tastes.

I was in the Dead Rabbit in New York last week and had something that was an old fashioned in all but name. Was marvellous.

Also had one in Manchester before where they got the sweetness from filling the glass with candy floss and pouring the cocktail mixture over it to dissolve it. Gimmicky (aren't all cocktails?) but delicious.

I'd switch out the vodka for whiskey and that would go down well.

Big fan of the real cuban Mojitos  too - worked for Dillon Bass in Belfast when they brought Havana rum to Ireland for the first time - got some great Mojitos and Cuba Libres from an authentic mixologist

Of a winters night we sometimes make warm apple cider with a shot of fireball in it thought its barely a cocktail?

I love this one at Christmas time

Hot Butterscotch

50ml whiskey
120-150ml boiling hot water
1 tbsp spiced butter*

● Warm a mug or Irish-coffee cup with boiling hot water. Discard the water. Add the whiskey, boiling hot water and spiced butter. Stir until the butter melts. Garnish with a cinnamon stick.

*To make the spiced butter: combine 250g butter and 250g brown sugar in a mixing bowl with one heaped teaspoon of allspice, one of cinnamon, a small pinch of ground clove and a teaspoon of good vanilla extract. Blend thoroughly with a fork. Press the mixture into a ramekin, or wrap it in cling film and shape into a stick of butter. Refrigerate. This mixture keeps well for two weeks.

You can add whatever spices you like, in fact.

Hard to beat a good Old fashioned for me.
