I believe the LDS church went to great lengths to "take back" the term mormon, and it is no longer considered offensive.

I have to say that on an individual basis, every mormon I know really is a shining example of goodness and decency. With the exception of keeping their wives home while they go to work as pretty much a standard (although most of the mormons I know are pretty well off, so maybe they can afford that lifestyle). You just need to tell them up front that you aren't interested in receiving the book, nor an invitation to any services.

I dont believe they find it an insult\offensive - they just dont use it officially in preferring the full name or "the church".
The mormons I know are happy to use the term.
